You had me at watermelon. I don’t know about you, but I could drink a gallon of fresh watermelon juice. It is so crisp, hydrating, light and it also contains an abundance of health benefits. It makes for the perfect mixer in a cocktail. You can sip pretty without feeling any guilt.
Summer is unfortunately slowly, but surely coming to an end. And if you are like me and don’t want summer to end I have the perfect solution! I created two cocktails to help us keep summer going. In addition, I wanted to create something that can appeal to a variety of people. I created a mimosa like cocktail for those morning brunches and a boozy punch like cocktail for those taco Tuesdays and weekday happy hours. This way you get the best of both worlds. These cocktails are also great for when you host because you can make the watermelon limeaid mixture and then your guests can select what type of liquor they prefer.
When making the watermelon limeaid mixer, I like to strain the juice after I blend the watermelon cubes to ensure that I get any unblended watermelon pulp out so that it is pure juice. You can make this in bulk so you can have a pitcher for a crowd or you can cut the recipe in half and use as needed for 1, 2, or 3 cocktails.
One thing that I did want to note was that the fresh juice does not last long. So, if you make in bulk make sure to use it up within 24-48 hours. If you are not able to do so, I would opt to make smaller batches as needed.
So, get your blender ready, polish those glasses and sit back, sip pretty and repeat.
