Watermelon Cocktails Two Ways

Ingredients

  • 7 Cups cubed watermelon, blended and strained
  • Fresh lime juice from three limes
  • 1-2 TBSP sugar
  • 1-2 TBSP honey
  • Mini watermelon wedges for garnish
  • Jalapeño coins for the Watermelon Limeaid Margarita
  • Prosecco if you are making the Watermelon Limeaid Sparkler
  • Tequila and Cointreau if you are making the Watermelon Limeaid Margarita

Instructions

Directions:

  1. Cut your watermelon into cubes. Measure out 7 cups and place in a blender.
  2. Blend on high until it is mixed and turns into a juice form. You might need to stop in between to push down the cubes so they get blended.
  3. Once it is blended and in juice form, strain your juice into a bowl and discard any excess pulp that was caught in the strainer.
  4. Pour the juice back in the blender and add the lime juice, honey and sugar. Blend again to mix well.
  5. Keep in the blender or transfer to pitcher of your choice for serving.

How to Make the Watermelon Limeaid Sparkler: 

  1. Pour Prosecco into your glass of choice. Fill about half to three quarters of the way up. Top with the watermelon limeaid mixer and garnish with a mini watermelon wedge.

How to Make the Watermelon Limeaid Margarita:

  1. In a shaker, add 4 jalapeño coins, 4 shots of tequila and 2 TBSP cointreau. Muddle until it is well mixed and the jalapeño spices are infused into the tequila.
  2. Fill your serving glass of choice with ice. Pour infused tequila over ice. Top with the fresh watermelon limeaid mixer and garnish with mini watermelon wedges and/or jalapeño coins.
