Strawberry Coconut Overnight Oats with Strawberry Milk

These strawberry coconut overnight oats with strawberry milk make for a healthy breakfast and are also good for your gut health! With fresh strawberries, chia seeds, quick oats, coconut flakes and additional simple ingredients, they are so tasty and my newest obsession!

It is no secret that I absolutely love breakfast and I need to eat in the morning right when I wake up or else I can get a little hangry. So, if you are anything like me, these are for you. This is meal prep made easy! These strawberry coconut overnight oats are a game changer and they keep me satisfied and energized throughout my day. I love coming down stairs, opening my fridge and seeing these beauties inside waiting for me, especially on those super busy, hectic mornings.

How do you make Strawberry Milk?

Making fresh strawberry milk is much easier than one might think, all you need is a high quality blender plus 5 simple ingredients. With that, you can easily whip up a batch in 5 minutes! One of the ingredients I wanted to highlight when making my strawberry milk is the milk, the type of milk and brand of milk. I absolutely love Califia and this milk is dairy free and gluten free. But, I love the toasted coconut almond milk flavor for this recipe specifically. It enhances the coconut flavor and gives it a slight nutty flavor at the same time. The flavor combination is pure perfection if you ask me!

Other ingredients needed for the strawberry milk:

  • Fresh strawberries
  • Vanilla extract
  • Maple syrup
  • Unsweetened vanilla coconut yogurt (I love the Harmless Harvest Rich and Creamy brand)

I absolutely love this overnight oats recipe because it is such an easy breakfasts to make, it contains healthy fats, they are filling, satisfying and more importantly, time savers! While they settle in your fridge overnight, the oats and fresh fruit soak up the liquid creating a creamy texture. Once they are made, you just need to grab and go the next morning. My favorite way to store them is in a mason jar. I recommend the 16 oz. size. It is not too big and not too small, it leaves enough room at the top too for garnishes and toppings if desired! If you do not have a mason jar, no problem! Just make sure to store it in an airtight container with a lid. Make these once and I can guarantee that this will be your new go-to recipe.

What substitutions can I make if needed?

  • Milk: I highly recommend sourcing the milk that is suggested in the recipe ingredients, however I know that might not be readily available to some. So, some other milks I can recommend are: coconut milk, oat milk, cashew milk or soy milk.
  • Yogurt: If you do not like coconut yogurt or are unable to source it, another option to use is greek yogurt. It might give it a tad bit more of a tangy taste, so just keep that in mind if you are making the swap.

What toppings do you recommend?

  • fresh berries
  • extra strawberries
  • flax seeds
  • nut butter
  • hemp hearts
  • strawberry jam
  • sweet strawberries
  • pinch of salt

Ingredients

For the Strawberry Coconut Milk:

  • 4 Cups strawberries, cut in half
  • 4 Cup toasted coconut almond milk (cali farms)
  • ½ Cup rich and creamy unsweetened vanilla coconut yogurt (harmless harvest)
  • 2 TSP vanilla extract
  • 3 TBSP maple syrup

For the Overnight Oats, Makes 1 Jar:

  • 1 and ¼ Cup Strawberry Coconut Milk (recipe above)
  • ½ Cup quick oats
  • ½ TBSP chia seeds
  • 3 TBSP shredded coconut
  • ¼ Cup strawberries, diced
Instructions
    1. Start by making your strawberry milk. In a blender, add all of the ingredients and blend to mix well. Set aside.
    2. In each jar or storage container of your choice, add ½ cup quick oats, ½ TBSP chia seeds and 3 TBSP shredded coconut. Mix well with a fork. Top with strawberry coconut milk. Mix well again. Add your diced strawberries and mix well for the last time again.
    3. Place the lid on top and place in the fridge overnight.
    4. The next day, top with more strawberries and shredded coconut if desired.
    5. ENJOY!
