Makes lasagna soup once, instantly becomes your favorite.
I love this recipe so much because it has everything you love about regular lasagna, but in the form of a warm bowl of comfort. It is truly one of those recipes that upon the first bite, it will warm your soul and make you feel giddy all inside.
Imagine this: tender sheets of lasagna, a savory tomato broth mixture, herbs, spices, garlic, onions and a crumble ground beef and sausage mixture with every spoonful. And for the icing on the cake, add a dollop of my creamy three cheese ricotta cheese mixture on top. It will taste just like the real thing, but better! In all honesty, lasagna tends to fall apart easily anyways, so this soup is similar in that way! Think deconstructed.
One of my favorite aspects of this recipe is that it is a one pot meal. You can cook all ingredients in one pot to eliminate dishes and the mess. Plus, it only takes about 30 minutes to make! It’s perfect for those times when you are craving lasagna or a savory pasta dish, but do not necessarily have the time.
Oh, and did I mention it’s perfect for feeding an entire family or having leftovers for the next few days. So, yes you can make this in advance! I love making a batch of this at the beginning of my week and it will get me through at least half of my week.
To make it a full Italian night in, I really enjoy serving it with homemade garlic bread, which is also great dipping in the soup. In addition, a fresh green salad on the side goes great as well.
