Filipino Brunch: Garlic Fried Rice, Plantains, Sunny Side Up Eggs and Longganisa

It is no secret that Filipinos love rice. We have rice with every meal. Lunch and dinner, even for breakfast and sometimes for dessert! We find ways to incorporate it into every meal we have and honestly, as weird as it may seem to have rice for breakfast or dessert it is surprisingly very normal and extremely tasty!

This Filipino breakfast is called Longsilog. It is a breakfast spread that is made up of garlic fried rice, longganisa, sliced plantains and sunny side up eggs.Serve it with banana ketchup and some calamansi (Filipino lime) or pandesal(Filipino bread roll) on the side. This meal is one of their most popular breakfasts and is the perfect combination of savory and sweet.

The Set Up: the setup of this food is known as boodie fight. In Tagalog and in the Filipino culture this is a military style or practice of eating the meal where all of the food is set upon a long table over banana leaves. You are supposed to use your bare hand since the food is set and placed on the banana leaves you essentially “fight for” or “attack” the food. In our case, we did not fight or attack the food and we did not eat with our barehands, however this style of eating and this presentation gives your guests that WOW factor and looks pretty.

So,what exactly is longganisa? It is a Filipino style sausage that is made up of pork, minced garlic, vinegar, salt and sugar. It is a sweet sausage which is little different compared to the traditional American breakfast sausage. So,this in addition to the plantains provide that sweet aspect of the breakfast. The eggs and garlic fried rice provide that savory aspect and then they all get combined it is like nothing you’ve ever tasted before! Pure magic and cultural shock in one, the good kind of cultural shock.

The great thing about this meal is that you can easily make this in your own home with minimal ingredients! Now, the real question is: where can I purchase longganisa from? You can purchase longganisa from any Asian market such as Seafood City or Garden Fresh. You can also purchase this off of instacart and get it delivered to your house! If you are looking for banana leaves as a part of this presentation you can also purchase this from Seafood City as well as online. Plantains can easily be found at any local grocery store where the bananas are located.

I get majority if not all of my Filipino items from Seafood City. They are my number one spot for all Filipino items. If you are located in Chicago, you are in luck because they have a location here! Other locations include: Los Angeles, San Diego, Northern California, Seattle, Nevada, Hawaii and Canada.

Ingredients

For the Filipino Brunch Spread:

  • 1-1.5 Lb. longganisa
  • 2 Plantains, sliced
  • Garlic fried rice (recipe to follow)
  • 8-10 Eggs sunny side up
  • Coconut oil

For the Garlic Fried Rice:

  • 5 Cups cooked white rice
  • 1 Head garlic, thinly sliced (1 cup garlic chips)
  • Vegetable oil
  • 3 TBSP green onion, thinly sliced
  • 1/2 TSP salt
Instructions
  1. To begin making your garlic fried rice, separate garlic cloves and peel the outside layer off of each one. When they are all peeled, thinly slice each one into chips and place in a bowl.
  2. To make the garlic chips fill a pot about 1/4-1/2 of the way up. Heat over medium to low heat. Once hot add your garlic chips and cook until they are golden brown about 10 minutes. NOTE: Keep an eye on them as you do not want them to burn and continue to stir them throughout the 10 minutes. When done, remove from oil and place on a paper towel lined plate and set aside. IMPORTANT: DO NOT discard the vegetable oil that the garlic was cooked in after garlic chips are done cooking you will need to reserve that for the garlic fried rice!
  3. Cooking the longganisa: place vegetable oil about 1/4 of the way in a pan or pot. Add sausage links and cookabout 15-20 minutes turned every so often to ensure all sides have been cooked. When they are done they will be nicely charred and no longer pink. They will be a bright red color. Remove from heat and set aside.
  4. Cooking the eggs: Heat 2 TSBP coconut oil in a pan over medium to low heat, once melted crack one egg and place in the pan. Place a lid on top and cook for about 2-3 minutes. If you notice the yolk turning white remove the lid. Cook until egg whites are no longer clear and egg yolk is a bright yellow. Cook as many eggs as needed.
  5. Slice your plantains thick. Inthe same pan as the eggs heat another 1-2 TBSP coconut oil. Add your plantains and cook on each side for 3-5 minutes until they become golden brown and slightly crispy. When done transfer to a paper towel lined plate.
  6. Making the garlic fried rice.Heat a wok or a pan with a rim over medium heat, add 1/4-1/2 cup of your saved garlic oil from the garlic chips and 5 cups cooked rice. Mix together. Add your cooked garlic chips, green onion and salt. Mix again. If the rice seems to be too sticky still add a little more garlic vegetable oil as needed. Heat for 3-5 minutes until hot. Once done remove from heat.
  7. Serve garlic fried rice with cooked plantains, longganisa and eggs. Serve with Calamansi/lime on the side for extra tang and banana ketchup or regular ketchup.
  8. ENJOY!
