Filipino Brunch: Garlic Fried Rice, Plantains, Sunny Side Up Eggs and Longganisa

Kainan in tagalog means: “eat together”. And that this what this Filipino Breakfast spread will do. This impressive spread will gather you and your loved ones around the table to all eat together and enjoy the most delicious spread.

Ingredients

For the Filipino Brunch Spread: 

  • 1-1.5 Lb. longganisa
  • 2 Plantains, sliced
  • Garlic fried rice (recipe to follow)
  • 8-10 Eggs sunny side up
  • Coconut oil

For the Garlic Fried Rice:

  • 5 Cups cooked white rice
  • 1 Head garlic, thinly sliced (1 cup garlic chips)
  • Vegetable oil
  • 3 TBSP green onion, thinly sliced
  • 1/2 TSP salt

Instructions

  1. To begin making your garlic fried rice, separate garlic cloves and peel the outside layer off of each one. When they are all peeled, thinly slice each one into chips and place in a bowl.
  2. To make the garlic chips fill a pot about 1/4-1/2 of the way up. Heat over medium to low heat. Once hot add your garlic chips and cook until they are golden brown about 10 minutes. NOTE: Keep an eye on them as you do not want them to burn and continue to stir them throughout the 10 minutes. When done, remove from oil and place on a paper towel lined plate and set aside. IMPORTANT: DO NOT discard the vegetable oil that the garlic was cooked in after garlic chips are done cooking you will need to reserve that for the garlic fried rice!
  3. Cooking the longganisa: place vegetable oil about 1/4 of the way in a pan or pot. Add sausage links and cookabout 15-20 minutes turned every so often to ensure all sides have been cooked.When they are done they will be nicely charred and no longer pink. They will be a bright red color. Remove from heat and set aside.
  4. Cooking the eggs: Heat 2 TSBP coconut oil in a pan over medium to low heat, once melted crack one egg and place in the pan. Place a lid on top and cook for about 2-3 minutes. If you notice the yolk turning white remove the lid. Cook until egg whites are no longer clear and egg yolk is a bright yellow. Cook as many eggs as needed.
  5. Slice your plantains thick. Inthe same pan as the eggs heat another 1-2 TBSP coconut oil. Add your plantains and cook on each side for 3-5 minutes until they become golden brown and slightly crispy. When done transfer to a paper towel lined plate.
  6. Making the garlic fried rice.Heat a wok or a pan with a rim over medium heat, add 1/4-1/2 cup of your saved garlic oil from the garlic chips and 5 cups cooked rice. Mix together. Add your cooked garlic chips, green onion and salt. Mix again. If the rice seems to be too sticky still add a little more garlic vegetable oil as needed. Heat for 3-5 minutes until hot. Once done remove from heat.
  7. Serve garlic fried rice with cooked plantains, longganisa and eggs. Serve with Calamansi/lime on the side for extra tang and banana ketchup or regular ketchup.
