Banza Bacon and Egg Breakfast Rice Bowl

Being a part of the Filipino culture, we eat rice with everything, anything and at any time of the day. It is just so natural to us and frankly, I love it! Rice goes with anything! With that being said, growing up every so often I would enjoy scrambled eggs with rice and my protein of choice for breakfast. Rice for breakfast is savory and filling so it always keeps me satisfied all morning long. Now, enjoying rice for breakfast might not be normal for all of us. But, I can guarantee that once you try this bowl it will quickly become your favorite go to breakfast!

This bowl contains savory garlic and herb banza rice which is made with chickpeas by the way! And when it gets cooked it's like a silky smooth rice pilaf. Mix it with crispy bacon, fresh juicy tomatoes and leafy green spinach. Then, top it with a creamy runny sunny side up egg and garnish it with fresh green onions. Simple ingredients get combined to make an irresistible way to start your day.

When it comes to the Banza’s Chickpea rice, I want to give it some praise. Not only do I love the taste and texture. But, I love how it contains 2X the protein, 35% less carbs and 5X the fiber than your average flavored rice packages! Woah is right! So, when I say this is a pantry staple must have, that means, run and don’t walk to your nearest store to stock up on this because you needed this in your life like yesterday!

In addition, can we just take a moment to appreciate chickpeas generally speaking. I want to be more like them, they are so versatile. They can be hummus, pasta, pizza crust, enjoyed alone…and now a rice! I truly have so much love for such a small little legume.

Let’s take a quick minute to talk about how this bowl is quick and easy. It is great for meal prepping and making ahead or even making the morning of. The formula for this deliciously healthy bowl is: greens + meat + carbs + more vegetables + the good kind of fat (avocado) + a dash of hot sauce and black pepper at the end if desired. It’s rather simple if you think about it.

Banza Bacon and Egg Breakfast Rice Bowl

If you thought rice was only for dinner, think again! It can be for breakfast too! Savory, protein packed, healthy & quick are all qualities this bowl possesses. One you try it, it will quickly become your new favorite way to enjoy this little grain!

Ingredients
  • 1 Package Banza Rice garlic and olive oil flavor
  • 1/2 Cup fresh spinach leaves
  • 1/2 Cup cherry or grape tomatoes, sliced in half
  • 1/2 Cup cooked bacon, chopped
  • 1-2 Sunny side up eggs
  • 2 TBSP Green onion
  • Half of an avocado, sliced
  • Hot sauce of choice for serving
  • Black pepper (optional) to serve on top of your sunny side up eggs
  • 1/2 TBSP coconut oil
Instructions
  1. Thinly sliced your spinach leaves and set aside.
  2. Thinly slice your green onions, set aside.
  3. Slice your avocado and set aside.
  4. Slice your cherry tomatoes and set aside.
  5. Cook your banza rice according to the package. When done, fluff it with a fork and remove from heat.
  6. While rice is cooking, cook your bacon until crispy and golden. When done, transfer to a plate lined with a paper towel and let cool.
  7. Once your bacon has cooled, chop up into pieces.
  8. Add your prepared spinach leaves, green onion and bacon to your cooked rice. Using a spoon mix well. Then, add your fresh cherry tomatoes. Mix well again. Set aside.
  9. Heat a skillet over medium heat and add your coconut oil and melt. Once melted, crack one egg in your pan and lower the heat to low. Cover and cook your egg for 2-3 minutes. When done, remove from heat. Cook as many eggs as you would like.
  10. To serve: scoop as much or as little as your rice mixture into a bowl as you would like. Top with your sunny side up egg and garnish with black pepper on top. Serve with hot sauce.
  11. ENJOY!
