Shaved Brussels Sprout Wonton Salad Cups

This Shaved Brussels Sprouts Salad is a winning salad and guaranteed to be a holiday favorite! It’s also great for many reasons outside of its look and taste. It is a versatile menu item that is great for any holiday not just Thanksgiving, you can enjoy it as is or in the cup and you can make it advanced! It is almost better to make in advance so you can give it time to cool in the fridge and let the dressing marinate.

This salad has quickly become one of my favorites and for good reason. It's gorgeous and full of texture. Plus, it contains all of the good stuff: leafy green brussels sprouts, creamy avocado, chewy dates, crunchy smokehouse almonds, juicy grapes, savory manchego cheese and a simple red wine vinegar dressing. With every bite you take it will make you want more and more! Don’t be surprised if you become addicted.

Holiday meals can tend to have so much going on with a full spread containing everything and anything. I wanted to provide a simple yet flavorful option. So, whenever I am looking to serve a healthier salad, I resort to this. It is a unique way to utilize a bag of brussels sprouts that you might have on hand and using brussels sprouts in a salad as the main green as opposed to your typical leafy greens might throw your guests a salad curve ball. Then, on top of it serving it in a wonton cup is the icing on the cake that will give them that wow-factor.

One thing I recommend when making this salad is to purchase the pre-shredded bag of brussels sprouts. It will make things much easier and faster. If you have a bag of whole brussels sprouts, you can easily shred them in your food processor or you could also finely chop them with a knife. But, I recommend purchasing them pre-shredded to save you some time and extra effort.

Shaved Brussels Sprout Wonton Salad Cups

Raise your hand if you think everything tastes better when they are mini! You bet my hand is raised! These Shaved Brussels Sprouts Wonton Salad Cups are so stinking cute and the little cups are made using wonton wrappers.

Ingredients
  • Wonton wrappers
  • 1 12 oz bag shredded brussels sprouts
  • 1 Avocado, cubed
  • ½ Cup dates, sliced
  • ½ Cup smokehouse almonds, chopped
  • ½ Cup grapes, sliced in quarters
  • ½ Cup manchego cheese, shaved
  • Fresh lemon juice from one lemon
  • ¼ Cup olive oil
  • 2 TBSP red wine vinegar
  • 1 TBSP date syrup
  • ½ TSP salt
  • ¼ TSP black pepper
Instructions
  1. In a bowl, combine lemon juice, olive oil, red wine vinegar, salt and pepper. Set aside.
  2. Chop your dates, set aside. Shave your manchego cheese, set aside. Cut your avocado into cubes. Slice your grapes in half, set aside.
  3. Pour your bag of shredded brussels sprouts in a bowl. Add your sliced almonds, dates, manchego cheese and avocado cubes.
  4. Pour the dressing over and mix well. Place in the fridge to cool.
  5. While the salad is cooling, cook your wonton cups. Preheat your oven to 350 degrees.
  6. Spray each muffin section with non-stick spray. Carefully press down your wonton wrappers in each muffin tin.
  7. Bake at 350 degrees for 8-10 minutes or until golden brown and crispy. When done, remove the muffin tin and let cool for 3-5 minutes.
  8. When they are done cooling, bring your salad out from the fridge and fill each wonton cup with the brussels sprouts salad and top with extra manchego cheese. Serve immediately.
  9. ENJOY!
