I love a good chopped salad because all of the fresh vegetables and leafy greens are chopped into tiny pieces and dressed to perfection, which means you get a little bit of everything with each spoonful. Since it’s so good I find myself devouring the whole bowl and then searching for more.
This is a great salad to meal prep for a tasty lunch during the week or serve on the side with your dinner. It’s one of those salads that is ideal for any and all occasions. Now, let’s talk about the ingredients. This salad is loaded with all of the good things, and things you most likely might already have in your fridge:
The combination of these ingredients gives it a nice, fresh, earthy, nutty and savory taste.
I really wanted to finish off this salad with a subtle yet light and bright dressing: red wine vinaigrette. It is superb and doesn’t overpower the other ingredients in the salad. The recipe for the dressing makes about ½ cup, but make sure to only pour over about ¼ cup so you don’t drench the entire salad and over do it. Trust me, a little dressing goes a long way. So, start with a little and gradually add more if desired.
When it comes to the kale, I opted to use baby kale from the package as opposed to fresh regular kale. I like the baby kale a little bit better because the leaves are smaller and not as though so it makes it easier for chopping into fine pieces and you don’t need to “marinate” the kale ahead of time aka let the dressing soak into the leaves so they are not as bland. But, if you opt to use regular kale that’s no problem at all! Still works great. You might just need to let the dressing soak in a little longer for serving.
