Chicken Salad in Radicchio Cups

New year, new me right!? OR is it new year, same me!? I can never get it straight! No matter what your goals are starting off this new year, you will want to add this chicken salad in radicchio cups to your list. Not only are they so pretty but they are the perfect for meal prepping lunches or even a lighter dinner. Want a midday snack, this works great for that too!

This chicken salad consists of tender juicy shredded chicken tossed in a creamy savory dressing with all of the green favorites: celery, celery root, grapes and apples. Oh! And I can’t forget the candied pecans that are coated in honey for a little extra sweetness and crunch. I absolutely love making this at the beginning of the week and having a stash of it all week long.

If you’ve never had radicchio before, you might be surprised. It’s gorgeous purple and white look doesn’t necessarily match it’s taste. It has a bitter yet slightly spicy taste. When you pair it with the savory, slightly sweet chicken salad, it all balances out. I will say, all though all of the flavors balance out, radicchio might not be your cup of tea. So, feel free to serve this chicken salad with regular butter lettuce cups or romaine lettuce cups. If you aren’t ditching the carbs at the beginning of this year, definitely make this into a sandwich with your favorite bread or serve it with crackers for a tasty snack.

With this recipe I used chicken breasts and boiled them for 15 minutes, then shredded it once it cooled down. If you don’t have the time or aren’t up for that you can absolutely use rotisserie chicken from the store. I just prefer to use plain chicken cooked in salted water because it doesn’t hold as much flavor as the rotisserie chicken and it will really bring out the other flavors in the salad from the fruits, vegetables, nuts and dressing that get mixed in.
