You can toss the tortillas aside because there is a new kind of wrap in town. Pasta shells! If you’ve never stuffed your enchiladas in a tender large pasta shell you are in for a real treat! Putting a twist on this classic dish is so fun and more delicious than you could have ever imagined.
Life is better when you eat enchiladas, but it is even better when you eat those enchiladas stuffed in a pasta shell instead of the traditional tortilla. This is one of my favorite dishes because you combine both Mexican and Italian flavors and textures in one. So, whether you are craving a Mexican dish or an italian dish, this meal is sure to cure both of those cravings!

These tender pretty enchilada stuffed pasta shells are so easy to make. What makes part of this dish so easy to make is the chicken. I used rotisserie chicken that has already been cooked to juicy flavorful perfection. So, all you need to do is shred and measure.
Another easy aspect of the dish is making the sauce. I love the Siete brand and their red enchilada sauce is so dang good. I incorporated their already made enchilada sauce into my own combining it with diced green chillies, fresh garlic, fresh lime juice and onions. The sauce is so simple containing only 5 ingredients with sprinkles of salt and pepper throughout. It can easily get made in 15 minutes or less!
If you are a cheese lover like me you will want freshly shredded cheese for this dish. There is nothing I love more than freshly grated cheese. It is so silky and flavorful. It almost melts in your mouth as is at the first taste of it. Now, don’t get me wrong, you can absolutely use pre-shredded cheese from the bag at the store. However, it prefer the freshly shredded cheeses from the block and I enjoy shredded it myself at home.
