Black Pepper Chicken

Ingredients

For the Black Pepper Chicken: 

  • 2 Lbs boneless skinless chicken breasts, cut in cubes
  • ½ Sweet onion, cut in chunks
  • 1 Red bell pepper, cut chunks
  • 2 Celery stalks, cut in ½ inch pieces
  • 1 TBSP fresh minced garlic
  • 1/2 Cup olive oil
  • 1/4 Cup low sodium soy sauce
  • 1/2 Cup corn starch
  • 1/2 TSP sesame oil
  • Steamed White Rice, for serving
  • Sesame seeds for garnish (optional)

For the Black Pepper Sauce: 

  • 1/2 tsp red pepper flakes or Korean chili flakes
  • 2 tsp coarse black pepper
  • 1/2 cup oyster sauce
  • 1/3 cup low sodium soy sauce
  • 2 TSP dark soy sauce
  • 1/4 Cup rice vinegar
Instructions
    1. Cut your chicken into cubes and place in a bowl. Add 1/4 cup low sodium soy sauce, sesame oil, minced garlic and corn starch. Mix well. Set aside.
    2. Cut your red bell pepper, celery and onion, set aside.
    3. Make your sauce by combining all ingredients in a bowl. Whisk well and set aside.
    4. In your wok, add your ½ cup olive oil. Let wok and oil become hot, about 1-2 minutes. Then, add half of your chicken mixture and cook for about 5 minutes or until golden brown. Remove that batch from the wok and place on a lined paper towel and repeat with your remaining chicken.
    5. In the same wok, drain some of your oil. All but about 1 TBSP and add your red bell pepper strips and celery. Saute for 3 minutes. Add your onion and saute for another 1 minutes.
    6. Add your chicken back in followed by your sauce and toss to mix well. Cook for another 2-3 minutes.
    7. Serve with steamed white rice.
    8. ENJOY!
