Berry Jicama Salsa with Star Cinnamon Sugar Chips

Do you ever go to a restaurant where they serve complimentary chips and salsa and you’re so hungry so you down the entire basket and bowl before you can even get your order in. Then, because of that you are so full and satisfied you end up taking your actual meal home? GUILTY. I’m totally guilty of that. There is just something so satisfying about chips and salsa that makes for the perfect snack,especially when that hunger strikes.

It must be the crisp chip paired with the cool fresh ingredients. They go so well together! Oh and don’t even get me started on the different variety’s of salsa,there are so many I love them all: traditional, mild, chunky, mango, verde…the list goes on! However, I specifically love mango salsa, I love the combination of sweet and salty. It’s just so good!

Since I love fruit in salsa I wanted a take on a completely sweet salsa with nosavory. Sounds a little weird, but it is fitting because 4th of July is right around the corner. So, I was able to pair red, white and blue ingredients that blend together to make a summer salsa that is so irresistibly good. Here we nix the salt tortilla chips and replace them with sweet cinnamon sugar chips, use basil instead of cilantro and use berries instead of tomatoes. Boom, a fruit salsa is born right before your eyes!

Tips on the Dish and Making the Cinnamon Sugar Chips:

Cutting them into stars with a star cookie cutter makes these 4th of July festive. Ithink they are so adorable and pleasing to the eye. However, if you do not have a cutter or you do not want to do the extra work then simply just use a pizza cutter and cut your circle tortillas into triangles as if you were cutting apizza. Don’t let the stars intimidate you, it is simply just the shape. So,with that being said, feel free to cut them however you would like: strips,circles, stars, etc. The world is your oyster!

One last thing I wanted to note, if you want to turn this into a red white and blue fruit salad and eliminate the chips all together you absolutely can or if you would rather have juicy watermelon in place of one of the berries you can as well! That is one of the things I love about this recipe. It is completely versatile and customizable. You can serve this how you would like and do what is best for you!

Berry Jicama Salsa with Star Cinnamon Sugar Chips

This festive red, white and blue salsa features fresh, light and full of flavor ingredients. It is making me feel berry patriotic over here! This dish can be enjoyed with these fun star shaped cinnamon sugar chips or on its own by spoonfuls.

Ingredients

For the Berry Jicama Salsa:

  • 2 Cups strawberries, chopped
  • 2 Pints raspberries
  • 1 Pint blueberries
  • 1 Cup jicama, diced
  • 2 TBSP fresh basil leaves,thinly sliced
  • 1 TBSP Agave nectar
  • 2 TBSP Lime juice + 1 TBSP lime zest
  • Pinch or two of salt

For the Cinnamon Sugar Star Chips:

  • 1 Packages white flour tortillas, makes about 15-30 chips
  • 2 TBSP Cinnamon
  • 1/2 cup White sugar
  • 4 TBSP butter
Instructions
  1. Wash all of your berries, gently pat dry and place in separate bowls. Set aside.
  2. Chop your strawberries and place in a large bowl. Add your raspberries and blueberries to the same bowl.
  3. Dice your Jicama and add to the bowl.
  4. Zest your lime and add to all of the ingredients in the bowl.
  5. Thinly slice your basil leaves and add to the bowl.
  6. In a small bowl mix your lime juice, agave nectar and salt. Whisk to blend.
  7. Pour your dressing over the fruit salsa and mix well to combine.Place in the fridge to cool and marinate.
  8. Pre-heat your oven to 400 degrees. Prepare a baking sheet with parchment paper and non-stick spray. Set aside.
  9. In a small bowl, combine cinnamon and white sugar. Using a fork mix together. Set aside.
  10. To make the cinnamon sugar chips, Cut your tortilla’s into star shapes using a star cookie cutter.Continue this process until all tortilla’s have been cut. Place them on a cutting board. When finished, melt your butter.
  11. Brush each one with your melted butter, then immediately sprinkle with a generous amount of your cinnamon sugar mixture. Transfer each prepared cinnamon sugar chip from the cutting board toyour prepared baking sheet.
  12. Bake in the oven for 6-9 minutes or until golden and crispy. When done, remove from heat and let cool for 5 minutes.
  13. When ready, serve cinnamon chips and berry jicama salsa together.
  14. ENJOY!
