Asian Wedge Salad

I don't know about you, but I needed and wanted a good detox after indulging in all of the Fourth of July foods from this past weekend. So, with that being said, here is a salad that will do just the trick! It is exceptionally flavorful between the sweet mandarin oranges, mixed with the savory sesame and fresh cucumber. This is my absolute favorite new go to salad to say the least. It is fresh, vibrant, crunchy and juicy. I kept wanting more more more! And so will you!

A Few Notes About the Dish:

  • Salad is great when served cold.
  • This is a completely vegetarian dish, however you are able to easily add grilled chicken or salmon on the side if you would like some extra protein.
  • This could be served in bulk as well and be made for when you host or for larger dinners. Your guests will love it!
  • Also, it is perfect for lunch during the day. That is when I had it and it was perfection.

Asian Wedge Salad

This Asian Wedge Salad is so delicious because it is topped with a juicy cucumber mandarin relish and served with a sweet sesame dressing on the side. It is perfect for those hot summer days when you want to enjoy your lunch or dinner on the patio.

Ingredients

For the Asian Wedge Salad:

  • 1 Head of romaine lettuce, cut in half or chopped
  • 1/2 Cup mini cucumbers, sliced or a regular cucumber diced. I found the mini snacking cucumbers at my local Mariano's
  • 1/2 Cup mandarin oranges
  • 1/4 Cup shredded carrots
  • 2 TBSP sliced almonds
  • 1 TBSP green onion, thinly sliced
  • Wonton crisps or crushed rice crackers

For the Sweet Sesame Dressing:

  • 1/4 Cup olive oil
  • 1/4 Cup Apple cider vinegar
  • 2 TBSP gluten free low sodium soy sauce
  • 1/8 TSP ground ginger
  • 1 TBSP white sesame seeds + more for garnish at the end
  • 1 TSP sesame oil
Instructions
  1. In a bowl, whisk all ingredients for the sweet sesame dressing. Set aside.
  2. Cut your head of romaine lettuce in half, wash and then pat dry. Place on the plate you are using. Lay one half down flat, then angle the other half on top.
  3. Open your can of mandarin oranges, drain and place 1/2 cup in a bowl.
  4. Slice cucumbers and place in the same bowl. Add shredded carrots, sliced almonds and green onion.
  5. Take 2-3 TBSP of your sweet sesame dressing and add it to the cucumber mandarin bowl to make the relish. Any extra dressing you have transfer to a smaller bowl to serve on the side.
  6. Take spoonfuls of relish and place on top of the romaine lettuce. Sprinkle some extra white sesame seeds and wonton crisps on top if using. Serve with extra dressing on the side.
  7. ENJOY!
