Can we talk about how insanely crispy, colorful and flavorful these Southwest Egg Rolls are for a second!? They are an exciting blend of southwest flavors and filled with chicken, beans, vegetables and cheese. They are the perfect snack or appetizer!
For the Southwest Egg Rolls:
- Egg roll wrappers
- ½ Cup black beans
- ½ Cup fresh corn on the cob, corn cut off the cob
- ½ Cup red bell pepper, diced
- 1 Cup cooked chicken (rotisserie, cooked cubed chicken breast, etc.)
- 1 TBSP cilantro, minced
- ¼ Cup diced pickled jalapenos (jeff’s garden)
- ¼ TSP salt
- ¼ TSP black pepper
- ¼ TSP chili powder
- ¼ TSP paprika
- ¼ TSP cumin
- ½ Cup shredded jalapeno monterey jack cheese block, shredded
- Water (to close and secure the egg rolls once wrapped)
For the Spicy Avocado Crema Dipping Sauce:
- 1 Avocado
- ¼ Cup Greek Yogurt
- ¼ Cup low fat sour cream
- ½ Jalapeno with seeds
- ¼ TSP salt
- ¼ TSP black pepper
- Fresh lime juice from one lime
