For the Opened Faced Summer Camp Skinnylicious Sloppy Joe’s:
- 1 Lb. Ground Beef, grass fed 85/15%
- Toasts (Texas Toast Style or bread cut in Texas toast form)
- Half of a yellow onion, minced + 2 TBSP extra for topping on the sloppy Joe’s
- 1 TBSP olive oil
- 4 garlic cloves, finely minced
- Salt and black pepper
- 1/2 cup Skinny Big Mac Sauce for the beef (recipe below) + remaining for serving on the side
- Dill pickles, diced
- Shredded lettuce
- Square American cheese slices
- Sesame seeds, for garnish on top
For the Skinny Big Mac Sauce:
- 1/3 Cup Carrot Ketchup
- 2 TSP Coarse Dijon mustard
- 1/4 Cup Distilled White Vinegar
- 2 TBSP Sweet Pickle relish
- 1 Cup greek yogurt or healthy mayo of your choice
- Pinch of Salt
- 1/2 TSP Onion powder
- 1/2 TSP Garlic powder
