- ½ Cup italian style bread crumbs
- ¼ Cup red onion, minced
- 2 TBSP crumbled feta
- 1 TBSP parsley, minced
- 1 TBSP mint leaves, minced
- 4 cloves garlic, minced
- ½ TSP dried oregano
- 1 TSP salt
- ¼ TSP black pepper
- 2 Red bell peppers, sliced
- 2 Green bell peppers, sliced
- 1 Red onion, sliced in half shape moons
For the Cucumber Tzatziki Sauce:
- 2 5.3 oz. small tubs Greek yogurt, 2% milk fat
- 1 TBSP fresh garlic, minced
- 1 TBSP olive oil
- Fresh lemon juice from one full lemon
- 1 TSP white vinegar or rice vinegar
- 2 TBSP fresh dill, minced
- 1 TSP salt
- 1/4 TSP black pepper
- ½ Cup cucumber, diced
For the Lemon Pepper Orzo:

- Zest from one lemon
