These Dragon Fruit Chia Pudding Parfaits can be enjoyed as a breakfast meal prep, an afternoon delight or post dinner dessert. It is an easy recipe that is loaded with bright, fresh, fruity flavor!
For the Chia Seed Pudding:
- 4 Cups unsweetened Vanilla Milk of choice, Good Karma Flax Milk with Protein or Malk Almond Vanilla brand
- 1 Cup frozen dragon fruit cubes, thawed for 15-20 minutes, Pitaya Foods brand
- 2 TBSP Raw agave
- 2 TSP vanilla extract
- ¼ Cup chia seeds
For the Toppings:
- Unsweetened vanilla coconut yogurt, So Delicious brand
- Extra raw agave drizzled ontop of the coconut yogurt (if desired for some extra sweetness)
- Strawberries, diced
- Mangoes, diced
- Pineapple, diced
- Coconut shreds
