Coconut Caramelized Spam Breakfast Rice Bowl
If you want to be transported to a beautiful Hawaiian or Philippine island, you must start your day with this recipe. It is the ultimate trio: spam, eggs and rice. This has been a meal that I grew up eating and I can’t wait to share it with you!

Ingredients
- 1 Can low sodium spam, cut in cubes
- 1 TBSP low sodium soy sauce
- 2 TBSP coconut sugar
- 1 TBSP coconut oil for the spam + 1 TSP for eggs
- Steamed white rice, for serving with
- 2 eggs, scrambled
- Pinch of salt
- 3 TSP oat milk
- Red chili flakes, for serving with if desired
- Crispy garlic, for garnishing the eggs with if desired (highly recommended)
- Ketchup for serving, if desired (highly recommended)
Instructions
- Measure out your rice and rinse under cold water until the water becomes clear. Place your washed rice in your rice cooker pot. Fill the pot with water up to the first line of your middle finger. Place the pot in the cooker and press down on the cooking button to begin cooking. Depending on your rice cooker, it will switch to "keep warm" when it's done cooking.
- Cut your spam into cubes, set aside.
- Add two eggs to a bowl, followed by your oat milk and pinch of salt. Whisk well to combine. Set aside.
- Heat a pan over medium heat and add 1 TBSP coconut oil. Once melted, add your spam cubes and cook on each side until golden brown and slightly crispy about 7-10 minutes.. When done, remove from heat and place them on a plate lined with a paper towel.
- Heat a separate pan over medium heat, add coconut sugar and soy sauce. Whisk to combine. Sauce should begin caramelizing and thicken. Add your cooked spam cubes and toss to combine. Once well coated about 3-5 minutes, remove from heat and set aside until ready to serve.
- Heat a separate pan over medium heat, add 1 TSP coconut oil and melt. Once melted pour in your whisked eggs. Using a spatula, push and move around your eggs, but don’t break apart in pieces. You want your eggs in more of a blanket form as opposed to crumbled scrambled eggs. Cook until eggs are no longer runny, about 3-5 minutes. When done, remove from heat. They should be like an egg blanket.
- To assemble your bowl, place 1 cup rice in a bowl, lay your egg blanket on top off to one side and then add your cooked spam cubes on top and off to the other side. Sprinkle red chili flakes and crispy garlic on top of your eggs and serve with ketchup on the side.
