Circus Animal Birthday Rice Krispie Treats

Ingredients

  • 5 Cups organic brown rice krispies cereal or regular rice krispies cereal
  • 15 Oz. mini marshmallows, melted (about 1-1/2 bags)
  • 1/4 Cup butter (4 TBSP)
  • 2 TSP vanilla extract
  • 1/2 Cup pearl sprinkles + 1 TSP for garnish on top (garnish is optional)
  • 2 Cups frosted animal crackers, finely crushed + a few extra whole ones for garnish on top

Instructions

  1. Prepare a baking dish and spray with non-stick spray. Set aside.
  2. Place frosted animal crackers in a ziplock bag or bowl and finely crush. (I used a ziplock bag and rolled a rolling pin over the bag multiple times or you can use a meat hammer to smash into fine pieces)
  3. Place rice krispies in a bowl, then transfer the crushed frosted animal crackers to the same bowl and mix well. (You want to mix while dried so it is easier once the sticky marshmallow goes in).
  4. In a pot, spray with non-stick spray and place over low heat. Add butter and melt. Stir until frothy and nutty about 3 minutes. Add marshmallows and stir until melted. Add vanilla extract and stir to combine. (I would also spray the rubber spatula you are using with non-stick spray to prevent from sticking to the spatula as well).
  5. Once everything is melted and mixed, remove from heat and pour over rice crispy mix immediately. Combine until everything is mixed well. Add sprinkles, mix well again.
  6. Transfer to your prepared baking dish and press down with fingers and hands so all parts are even from the middle to the edges.
  7. Garnish with extra sprinkles and animal crackers on top. (For the animal cracker garnished, you will need to press them into the rice krispies so they stay in there).
  8. Set aside uncovered at room temperature. Once they are firm about 30 minutes to 1 hour. Remove from baking dish and cut in squares, serve immediately or transfer to an air tight container. They will be good for about 1 week.
