Chicken and Shrimp Wonton Soup

Chinese inspired Chicken and Shrimp Wonton Soup that is more convenient and healthier than your local take out joint. You can use store bought wontons or make these Pretty Plate homemade ones that are not only great for soup but, air frying and steam

Ingredients

  • 1/2 Lb. ground chicken
  • 1/2 Lb. raw shrimp, deveined, shells removed and minced
  • 1 carrot sticks, cut in chunks
  • 1 celery sticks, cut in chunks
  • 2 garlic cloves
  • ¼ of a yellow onion, cut in chunks
  • 1 parsley sprigs, leaves removed from its stem
  • 1/4 TSP salt for wonton mixture + ¼ TSP for soup 
  • ¼ TSP fresh ground black pepper
  • 1/2 TBSP soy sauce
  • 1/2 TSP sesame oil
  • Bok choy 
  • 2 green onion stalks, white parts and green parts 
  • 10 cups vegetable broth or chicken broth (I used Kettle and Fire brand)
  • Wonton wrappers, small square size

Instructions

  1. In your food processor, add your chunks of carrots, celery, yellow onion, garlic cloves and parsley. Pulse until everything is finely minced and well combined. Set aside. 
  2. Using a knife, chop your shrimp into fine pieces. They should be finely minced. 
  3. Slice your green onion, set aside. 
  4. Cut the bottom stems from your bok choy, separate each leaf and set aside. 
  5. In a mixing bowl, mix your ground chicken, minced shrimp and vegetable mixture from the food processor. Add salt, freshly ground pepper, soy sauce and sesame oil. Mix well again until everything is combined.
  6. Using 1 TSP measuring spoon, scoop out your chicken and shrimp mixture. Place it in the middle of your wonton wrapper. Fold your wonton in half and then take the two bottom ends and bring them together in the center tap one end with some water and press the two ends together to secure the wonton. Continue this process until all wontons are made. 
  7. When all wontons are made, measure out 10 cups of broth and palace in a pot over medium heat. Bring to a boil, once boiling, lower the heat to low and bring it to a simmer. Add your wontons, followed by your green onion and bok choy. Simmer for 10-15 minutes until wontons are cooked through and greens are vibrant. When done, serve immediately.
