Cajun Shrimp and Salmon Boil

...Crack open a beer, invite your friends over and get that pot boiling! This is messy, it's flavorful and it's spicy. So, don't be afraid to let your nose run.

Ingredients

  • 5 Corn on the cobs, cut in fourths
  • 8 Medium sized red potatoes, cut in quarters
  • 3 Salmon fillets, cut in cubes
  • 2 Smoky andouille sausage links
  • 1 LB. shrimp, deveined and tails on
  • 6 TBSP old bay seasoning
  • 2 TBSP butter + 1/2 cup melted for serving on the side
  • 2-3 TBSP minced Garlic (I love lots of garlic, especially with this dish)
  • 2 Bay leaves
  • One Lemon, cut in half then slice in wheels, for serving
  • Hot sauce of choice to serve on the side (optional), for serving

Instructions

  1. Prepare all items: cut corns on the cob in fourths, cut potatoes in quarters, sausage and salmon in cubes and set all aside.
  2. Fill an x-large, deep pot with water half way. Add old bay seasoning, 2 TBSP butter, 2-3 TBSP minced garlic and to bay leaves. Stir and bring to a boil.
  3. First add the potatoes and then the corn. Boil for about 7 minutes or until potatoes are a bit tender.
  4. Then, add sausage. Boil for another 3 minutes.
  5. Add shrimp and salmon pieces. Boil for another 2 minutes.
  6. Remove food from the pot and place in another bowl. Immediately serve. Dump all food items onto a newspaper or parchment paper spread. Serve with choice of hot sauce, melted butter and lemon wheels on the side if desired.
