Breakfast Chicken Sausage Vegetable Egg Bake with Hash

This might be my new favorite breakfast item, it’s literally the best breakfast bake I've ever made. It is packed with protein, hearty vegetables, creamy cheese and even hash browns. It’s your one stop shop for everything savory in one bite!

Ingredients

  • 8 Eggs at Room Temperature
  • 1 and ½ Cup Kielbasa turkey sausage links, diced OR chicken sausage of choice
  • 1 20 oz. package hash browns, refrigerated
  • 1 Green bell pepper, diced
  • 1 red bell pepper, diced
  • Half of a yellow onion, minced
  • 4 TBSP Green Onions stalks, sliced both green and white parts
  • 1 TBSP fresh garlic, minced
  • 1 Cup freshly grated cheddar cheese from the block or pre-shredded if desired
  • 4 TBSP olive oil, divided
  • 1 Cup good karma flax milk, plain unsweetened
  • ½ TBSP fresh parsley, minced
  • 4 pinches of paprika
  • ½ TSP salt
  • ¼ TSP black pepper

Instructions

    1. Preheat your oven to 375 Degrees & prepare a rectangle baking dish with non-stick spray.
    2. Heat 2 TBSP Olive Oil in a non-stick pan over medium heat & add the hash browns. Season with salt and pepper. Cook until golden brown, about 20 minutes. Set aside.
    3. Prepare all of your vegetables. Dice your red and green bell peppers, mince your garlic, onions, parsley, slice your green onions and dice your sausage. Set aside.
    4. Shred your cheddar cheese in a box grater. Set aside.
    5. Crack the room temperature eggs in a bowl. Add milk, salt, pepper and paprika. Whisk & set aside.
    6. Heat 2 TBSP in another non-stick pan over medium heat and add the yellow onions and garlic. Sauté until onions are translucent for about 2 minutes. Add both green and red bell peppers and continue to sauté for another 2 minutes. Add the diced kielbasa sausage and cook  mixture for an additional 5 minutes. When done, remove from the heat.
    7. In a large bowl, mix together: cooked hash browns, cooked sausage and vegetable mixture, green onions, cheddar cheese, & parsley flakes. Transfer to your prepared baking dish.
    8. Pour egg mixture over sausage and vegetable mixture and mix everything together well so the egg settles evenly throughout the baking dish.
    9. Bake at 375 for 35 minutes.
    10. When done, remove and let cool. Serve with your favorite hot sauce and garnish with extra green onion and parsley if desired.
