Southwest Egg Rolls with a Spicy Avocado Crema Dipping Sauce

Egg rolls are life, plain and simple. You get the best of both worlds, a super crunchy and crispy outside and an inside that gets filled with all kinds of flavorful goodies. I will say though that these aren’t your typical egg rolls.

They have southwest flavors of cumin, chili powder and paprika that get mixed with black beans, corn, bell pepper, jalapenos, cilantro, jalapeno monterey jack cheese and chicken. Just one bite and you will be hooked!

Enjoy these on their own as is, with hot sauce or did I mention my spicy avocado crema dipping sauce. It takes these egg rolls over the top! Because it is made with avocado, greek yogurt and low fat sour cream this dip is sure to be extra creamy. You can adjust your spice level to your liking by adding in as much or as little jalapenos before blending. Plus, the lime juice adds a little bit of tang to make for the perfect spicy, tangy, creamy combo.

I love that these are a little healthier because there is no cooking oil involved. You just need your air fryer and to let it do the work for you. A little tip before you air fry: spraying the tops of your egg roll wrappers after you put them in the basket and before you cook. Doing this ensures they come out extra golden and crispy.

Serve these as a pre-dinner snack, an appetizer at your next gathering or at your office potluck. They are guaranteed to be a hit!

Can we talk about how insanely crispy, colorful and flavorful these Southwest Egg Rolls are for a second!? They are an exciting blend of southwest flavors and filled with chicken, beans, vegetables and cheese. They are the perfect snack or appetizer!

Ingredients

For the Southwest Egg Rolls:

  • Egg roll wrappers
  • ½  Cup black beans
  • ½ Cup fresh corn on the cob, corn cut off the cob
  • ½ Cup red bell pepper, diced
  • 1 Cup cooked chicken (rotisserie, cooked cubed chicken breast, etc.)
  • 1 TBSP cilantro, minced
  • ¼ Cup diced pickled jalapenos (jeff’s garden)
  • ¼ TSP salt
  • ¼ TSP black pepper
  • ¼ TSP chili powder
  • ¼ TSP paprika
  • ¼ TSP cumin
  • ½ Cup shredded jalapeno monterey jack cheese block, shredded
  • Water (to close and secure the egg rolls once wrapped)

For the Spicy Avocado Crema Dipping Sauce: 

  • 1 Avocado
  • ¼ Cup Greek Yogurt
  • ¼ Cup low fat sour cream
  • ½ Jalapeno with seeds
  • ¼ TSP salt
  • ¼ TSP black pepper
  • Fresh lime juice from one lime
Instructions
  1. Make your spicy avocado crema dipping sauce by adding all the ingredients to your food processor or blender and blend until smooth. Place in a bowl and set in the fridge to cool while you make your egg rolls.
  2. Prepare your filling: drain your can of black beans, cook your corn on the cobb, then cut the corn off the cob, dice your red bell pepper, cut your chicken into cubes or shred your rotisserie chicken, mince your cilantro and grate your cheese. Set everything aside.
  3. Fill a small bowl with water. Set aside.
  4. Place all of your prepared filling ingredients in a large bowl. Add: 2 TBSP diced pickled jalapenos, ¼ TSP salt, ¼ TSP black pepper, ¼ TSP chili powder, ¼ TSP paprika and ¼ TSP cumin. Mix well.
  5. Make your egg rolls. Start by scoping out ¼ cup mixture from the bowl and place it in the center of your egg roll wrapper. Turn your egg roll wrapper so one of the corners is pointing towards you. Pull that corner up and fold over the filling. Take the two edges on the left and right sides and flip it over towards the center. Then roll the egg roll forward to close and secure. Dab the edges of the egg roll lip with water so it will stick to the other side of the egg roll to close and secure it.
  6. Continue this process until all egg rolls have been assembled.
  7. Preheat your air fryer to 380 degrees. When done, spray the bottom of the air fryer basket with nonstick spray. Place your egg rolls in the basket, spray the tops with extra nonstick spray. Air fry at 380 degrees for 6-10 minutes or until all sides are golden and crispy. Flipping halfway through. NOTE: if the egg rolls are looking a little translucent and you can see the filling through it. It will need to be put back in for a little longer.  
  8. When done, remove from the air fryer, serve with spicy avocado crema dipping sauce.
  9. ENJOY!
