Honey Lemon Chicken and Green Beans

Tender coated chicken breasts with crispy green beans smothered in a sweet, sticky and zesty sauce...need I say more? I absolutely love this flavor combo! This is a terrific recipe to have on hand when you are looking for that easy, yet tasty recipe.

Believe it or not, there are some days I just don’t feel like cooking. But, then again I still want something that is homemade. I sit there torn on what to do. If you ever get in those moods like myself, this is the perfect recipe for you. It can easily be whipped up and all you need is 4 main ingredients with a few other pantry staples and you’re in business! Dinner will be whipped up in no time.

Now, when it specifically comes to chicken, it tends to be a popular protein people usually have on hand, I am guilty of that. There is so much you can do with it, but who wants to continue to resort to the same teriyaki or grilled chicken. Don’t get me wrong, love those, but sorry not again, not me! I am always looking for new ways to make it delicious, easy, healthy and anything but boring.

So, with that being said, I love this dish because of it’s simplicity and taste. There are not a ton of hard ingredients, it’s fast cooking and flavorsome. My go to is serving this with steamed white rice on the side. But, I’m Asian and I eat white rice with everything, so there is no surprise there ha. If you are looking for other alternatives, this also pairs will with pasta, cauliflower rice or quinoa to name a few.

Anytime I enjoy a chicken dish I always feel the need to incorporate some sort of green. Getting those greens and vegetables in is important! My common go to is chicken and broccoli, but since I wanted to get creative and change things up, one of my other favorite greens is green beans. They have such a vibrant color, are a good source of vitamins and minerals and they have a nice crunch to them. I must say they paired perfectly in this dish!

Honey Lemon Chicken and Green Beans

When you combine honey, lemon, chicken & green beans it gives you a flavorful, yet simple dish you can easily whip up at anytime. Four main ingredients with the help of a few other pantry staples creates a meal the whole family is guaranteed to love.

Ingredients
  • 2 Lbs. Filleted Chicken Breasts
  • 1 Cup honey
  • 1/4 Cup lemon juice + lemon slices
  • 1/2 Cup chicken broth
  • 1 TBSP apple cider vinegar
  • 1 TBSP minced garlic
  • 4 TBSP Olive oil
  • 3 TBSP cold butter (right from the fridge)
  • 1/2 Cup flour (for chicken) + 1/2 TBSP sifted flour for sauce
  • 1 TSP salt
  • 1/2 TSP black pepper
  • 1 12 Oz bag Green beans, cut in 2 inch pieces
  • Steamed white jasmine rice, for serving with (optional)
Instructions
  1. Mix your flour, salt and black pepper in a bowl. Set aside.
  2. If your chicken breasts are not filleted, filet them so they are thinner and cook faster. Then, cut in half. NOTE: so, you should have 2 pieces of chicken per 1 filleted breast.
  3. Dip your chicken breasts in your flour mixture and shake any excess off. Set on a plate and continue this process until all chicken breasts are covered in flour. Set plate aside.
  4. Make the honey lemon sauce. Place honey, lemon juice, chicken broth, apple cider vinegar and minced garlic in a bowl. Whisk until smooth and everything is mixed well. Set aside.
  5. Cut your green beans in 2 inch pieces. Place in a bowl and set aside.
  6. Heat a pan over medium heat, pour 2 TBSP olive oil in the pan and heat over medium heat. Once hot, add your flour covered chicken breasts. Cook on each side for 3-4 minutes. NOTE: if the chicken breasts are thicker, cook a bit longer until no longer pink in the middle.
  7. Heat your cast iron or another pan sprayed with non-stick spray over medium heat. Once hot, pour your sauce in, bring to a boil. Once boiling lower heat to medium low. Add your cold butter and melt. Using a whisk whisk sauce to mix everything together.
  8. Sift in 1/2 TBSP flour and whisk again to mix and thicken the sauce.
  9. Next, add your green beans and lemon wheels and cook for 5-7 minutes uncovered over medium low heat NOTE: make sure sauce is simmering and bubbly and green beans should be vibrant and crisp.
  10. Then, add your chicken breasts and cook for another 2-3 minutes spooning the sauce over the chicken.
  11. When done, remove from heat and serve immediately. Serve with white rice.
  12. ENJOY!
