Chicken and Shrimp Wonton Soup

Freshly made wontons that are stuffed with a savory chicken and shrimp mixture and then, each folded to perfection. After they are constructed, they simmer in hot flavorful broth with vibrant greens and served with ginger and hot sauce on the side.

Wontons are one of my favorite things. They are such a versatile item because they can be made with various ingredients and cooking methods and if I am being honest, I love them every which way. I enjoy them whether they are stuffed with vegetables or with proteins. I also love them steamed, fried and especially on cold winter days…in my soup! When they are added to a soup I get to enjoy them in their simplest and purest form.

I don’t know about you, but sometimes I find it hard to find the perfect wonton. Sometimes they can be too doughy, other times they can be bland and every so often I get ones that are either too small or too just too big. I’ve always wanted to master making my own at home so that way I can avoid any of these minor mishaps.

When making them at home, I know exactly what ingredients are in the filling and I can control the filling to dough ratio. The only tricky part was learning how to fold them correctly and if I can do it you can too! When you fill and cook them yourself at home it is perfect for those cold weather nights you do not want to leave your house, a fun date night in or even a cozy weeknight meal.

One of the best things about this recipe is that once all of the hard work has been done, you can freeze an abundance of these until ready to cook. So, if you feel like one night you want them fried or steamed as an appetizer, pop some out of the freezer and then save the rest for when you are craving a cozy healthy warm soup.

Anytime we order chinese take out I always request for a warm flavor soup to be added to the order whether it be miso, egg drop or wonton. I am a big soup gal over here, especially during the winter months and I will say that I find myself always gravitating towards the wonton soup. Wonton soup is a great dinner option because of the simplicity of it, yet at the same time it satisfies your tummy. The broth is always warm and inviting, the wontons are always filling and yet somehow I never really feel overly full from it. Plus, it’s a healthier option too.

When it comes to my soup, the soup itself only consists of 4 main ingredients: broth, green onion, bok choy and wontons. Once the wontons are made, making the soup is a breeze. So, trust me when I say that you will definitely reap the benefits from making numerous cute mini homemade wontons.

Ingredients
  • 1/2 Lb. ground chicken
  • 1/2 Lb. raw shrimp, deveined, shells removed and minced
  • 1 carrot sticks, cut in chunks
  • 1 celery sticks, cut in chunks
  • 2 garlic cloves
  • ¼ of a yellow onion, cut in chunks
  • 1 parsley sprigs, leaves removed from its stem
  • 1/4 TSP salt for wonton mixture + ¼ TSP for soup
  • ¼ TSP fresh ground black pepper
  • 1/2 TBSP soy sauce
  • 1/2 TSP sesame oil
  • Bok choy
  • 2 green onion stalks, white parts and green parts
  • 10 cups vegetable broth or chicken broth (I used Kettle and Fire brand)
  • Wonton wrappers, small square size
Instructions
  1. In your food processor, add your chunks of carrots, celery, yellow onion, garlic cloves and parsley. Pulse until everything is finely minced and well combined. Set aside.
  2. Using a knife, chop your shrimp into fine pieces. They should be finely minced.
  3. Slice your green onion, set aside.
  4. Cut the bottom stems from your bok choy, separate each leaf and set aside.
  5. In a mixing bowl, mix your ground chicken, minced shrimp and vegetable mixture from the food processor. Add salt, freshly ground pepper, soy sauce and sesame oil. Mix well again until everything is combined.
  6. Using 1 TSP measuring spoon, scoop out your chicken and shrimp mixture. Place it in the middle of your wonton wrapper. Fold your wonton in half and then take the two bottom ends and bring them together in the center tap one end with some water and press the two ends together to secure the wonton. Continue this process until all wontons are made.
  7. When all wontons are made, measure out 10 cups of broth and palace in a pot over medium heat. Bring to a boil, once boiling, lower the heat to low and bring it to a simmer. Add your wontons, followed by your green onion and bok choy. Simmer for 10-15 minutes until wontons are cooked through and greens are vibrant. When done, serve immediately.
  8. ENJOY!
