Air Fryer Blackened Salmon with Parmesan Zucchini Chips

Cooking meals in my air fryer might be my new favorite go to. It is so simple to use and every meal gets cooked to perfection every time. It is all around a win win! The salmon comes out with a crispy outside and a juicy flaky tender inside and the zucchini chips get cooked to a perfect golden brown. Pair these with two different dipping sauces that you can mix and match to make for the most mouthwatering meal!

This salmon and zucchini duo will be your new go to meal. When these two items are paired together and made in your air fryer, they make for a delicious, healthy, low carb, packed with protein meal. Place them on a board with two different dipping sauces and you will have your family, significant other or friends gathered around the table in seconds.

I was taken by surprise when I saw how simple it was to make salmon in my air fryer as opposed to the oven. The taste and texture came out so good, if not better! I thought the oven was easy, but I think I found a new replacement for those salmon oven recipes!

I wanted to use a rub for this recipe as opposed to a marinade, because I was planning on making the zucchini chips in the same fryer and I did not want a huge mess or any of the marinade getting all over the zucchini chips. Using a rub is one of my favorite things to do when I don’t marinate. The rub sticks to the protein like glue which in turn makes the fish extra flavorsome. It also helps creates that crispy outside. So, rubs = less mess and extra flavorsome. I do like to let the rub sit on the protein for about 15-20 minutes prior to cooking to really soak in. When it comes to serving a sauce on the side, it is optional. You can choose to eat it on its own, but pairing it with a BBQ sauce is recommended. My go to as known from other recipes is: Lillie’s Q Smoky BBQ Sauce.

Air fried zucchini chips is an item that could be a snack or side dish to any meal. These are a wonderful alternative to steamed or sautéed vegetables if you are looking for that extra burst of flavor and crisp. If you haven’t had these already, you are going to love them! It is a great way to enjoy your favorite crispy potato snack without the all of the carbs. Plus, it is a great way to still get your daily intake of vegetables and enjoy them at the same time too!

These little guys only require 3 easy ingredients to make: bread crumbs, grated parmesan cheese and eggs. I actually do not even use salt or pepper because the cheese has so much flavoring and the dipping sauces add to that as well. Vegetables are hard to eat as is and I love transforming them into magnificent delicious recipes for you all to make eating them much more bearable and enjoyable.

The dipping sauce I recommend for these chips is my homemade ranch dressing, that is also used for my wedge salad skewers recipe, you can find this recipe HERE. It is highly recommend and It is AMAZING! Whenever I get the choice to pick between a homemade dressing or a store bought one, I always pick the homemade, hands down. It is more authentic. I did also dip them in the BBQ sauce and treated them as if they were French fries and I was not disappointed! They are good with both. That is what makes this board so fun, is the ability for you to mix and match the dippings sauces, proteins and vegetables.

Air Fryer Blackened Salmon with Parmesan Zucchini Chips

This low carb, low calorie meal: Salmon with Zucchini Chips is great for a weeknight or weekend dinner if you are looking for something lighter and healthy, yet delicious!

Ingredients

For the Blackened Salmon:

  • 3-4 Salmon filets, washed and patted dry
  • 1 TBSP chili powder
  • 1 TSP red cayenne pepper
  • 1 TSP paprika
  • 1 TSP garlic powder
  • 1/2 TSP black pepper
  • 1 TSP salt
  • 1 TSP dried thyme leaves

For the Parmesan Zucchini Chips:

  • 2 Medium sized, zucchinis (I did one yellow and one green for some extra color)
  • 2 Eggs, whisked
  • 1 Cup plain bread crumbs
  • 1/2 Cup parmesan cheese, grated
Instructions

For the Blackened Salmon:

  1. Wash your salmon filets and pat them dry. Set aside.
  2. In a bowl, mix all of the seasonings together make the blackened rub. This is to include: chili powder, red cayenne pepper, paprika, garlic powder, black pepper, salt and dried thyme leaves.
  3. When mixed, take your rub and rub the seasoning on all sides of the salmon and coat the salmon really well. Make sure there is no pink showing.
  4. Preheat your air fryer to 350. Once preheated cook in your air fryer for 8-10 minutes.
  5. Serve right away and with your favorite dipping sauce or on its own. I recommend BBQ. Garnish with dried parsley flakes if desired.
  6. ENJOY!

For the Parmesan Zucchini Chips:

  1. Wash both of your zucchini‘s and slice them as thin as you can (If you have some thicker slices in there, it is not a problem). Place them in a bowl.
  2. Whisk your eggs in another bowl.
  3. Combine your bread crumbs and parmesan cheese.
  4. To make, dip a zucchini chip in your egg, then in the parmesan and bread crumb mixture. Place on a baking sheet. Repeat this process until all zucchini chips are coated.
  5. If you did not make the salmon beforehand, preheat your air fryer to 375. Once preheated. Add zucchini chips and air fry for 12-15 minutes, flipping the chips half way through. Cook until they are golden brown and crispy.
  6. Serve immediately with ranch dressing or your choice or dipping sauce on the side. Garnish with extra parmesan cheese and dried parsley flakes if desired.
  7. ENJOY!
