25 Minute One Pot Spinach and Lemon Spaghetti Dinner

This 25 Minute One Pot Spinach and Lemon Spaghetti Dinner is as easy and healthy as it gets! The entire meal is made in one pot by tossing all of the ingredients together and cooking everything together at the same time. Once your pot is on the burner, the stove will take care of the rest.

This meal is made with simple fridge and pantry staples you might already have in your kitchen such as: fresh tomatoes, garlic, sweet onion, lemon, spinach, red pepper flakes, salt and pepper. Plus, no broth is needed! Just add water. So, if you are ever stuck with what you think might be random ingredients, it turns out they can make something magical and feed the whole family in minutes!

I love this dish so much because you can take these simple ingredients, cook them and bring out all of their natural flavors. Since this is made with water and all of the ingredients natural juices, you truly get to enjoy the dish in its purest form. You turn something simple to something incredibly delicious while also staying healthy. And I’m telling you, it does not get any better than this.

Now, I want to be clear on something, when I say the stove will do all the cooking for you, it will! But, you do need to mix and stir every so often. Especially when the noodles become tender you want the noodles to soak in all of the flavors and make sure everything gets mixed well.

Also, the one and only ingredient I don’t add until near the end is the spinach. If you add it at the start with all of the other ingredients, by the time the dish is done the spinach will be well over wilted. You want to add them just before serving as the water is almost evaporated so it can wilt a little bit instead of a lot. You want them to be vibrant green, not have the green life sucked out of them.

Make this as an easy healthy dinner for the family, last minute weekend meal or an elegant dish for when you host.

If you think that dinner being ready and on the table in 25 minutes sounds too good to be true, think again! This one pot spaghetti dinner is so simple, easy and flavorful. Just throw everything into the pot and let your stove take care of the rest!

Ingredients
  • 12 oz. spaghetti
  • ½ Cup sweet onion, thinly sliced
  • 3 garlic cloves, thinly sliced or minced
  • 3 Cups spinach, packed
  • 2 Ripe tomatoes, chopped in thicker pieces
  • Fresh lemon juice from one lemon
  • Lemon zest from half lemon
  • 4 Cups water
  • ¼ TSP red pepper flakes
  • ¼ TSP fresh crushed black pepper
  • 2 TSP pink himalayan salt
Instructions
  1. Start by placing your spaghetti in the pot.
  2. Thinly slice your sweet onion and add to the pot. Thinly slice or mince your garlic and add to the pot. Chop your tomatoes and add to the pot. Zest your lemon into the pot.
  3. Add your red pepper flakes, black pepper and pink himalayan salt.
  4. Finally, add your water and lemon juice.
  5. Place the pot over medium high heat and bring to a boil. Boil over medium high - high heat for 20 minutes on your boil burner. Make sure to mix and stir every so often. After 20 minutes most of the water has evaporated.
  6. Add in your spinach and cook for another 3-5 minutes until spinach is wilted and vibrant green. Majority or all of the water should be gone or thickened at this point, pasta should be al dente and everything should be mixed well. When it’s done, remove from heat.
  7. ENJOY!
